I have always been a salad sort of chap; with a decent vinaigrette and some sturdy components it can be the food of kings. And none come sturdier than a salad that centres around tuna, egg and potatoes. Each time I visit mum in Nice this dish makes my hit list. Obviously each establishments have their own versions, but below are some of the basics. I do enjoy green beans in mine, but this was compiled from odds and sods in the fridge. The vinaigrette is the ever faithful olive oil / white wine vinegar / Dijon mustard / garlic and seasoning.
